Throw all the ingredients into the instant pot, mix it and turn it on high pressure for 25 minutes. Make sure you have the seal on. That's it! You can let it slow release or quick release it, like I did. I love how simple this recipe is. It's perfect for a weeknight when you have other things going on.

Taste

I love soups with red lentils and soups with coconut milk and when you add those two together— I immediately love it! The red lentils give it a great texture and make it thick while the coconut milk makes it nice and creamy. The corn gave it a sweetness while still keeping it savory. I think I ate a full bowl of this before I finished taking photos and had to make a new bowl of it. It was great!

I noticed Hannah used (what looks like) soy sauce on top so I gave that a try. I feel like I didn't add enough salt but the soy sauce gave it a nice flavor and added some saltiness. I love hot sauce and thought it might go good on top of this too (I guess my thought was like spicy jalopeno corn bread ). I tried a few but my favorite was chipotle tabasco sauce. The smokiness went well with it.

Price

This is a cheap recipe that is easily less than $10 worth of ingredients. I buy red lentils in bulk on Amazon. You can get a 4 lb bag for $11 and you only need 1 cup of it for this recipe. I also wait for frozen veggies to go on sale (bogo) then stock up on them. They will stay fresh in the freezer so it's something I like to buy a lot of at once too.

Aesthetic

It has a vibrant golden color to it that reminds me of a curry. Pairing it with rice and a salad gives it a healthy well rounded look. I love the contrast of soy sauce drizzled on top which also adds flavor to the dish.

Ease

This is a quick and easy recipe where all you do is put everything in the instant pot and turn it on. You don't even have to stir it periodically like you usually would when cooking on the stove top. It doesn't get easier than this!

Would I make it again?

This recipe checks all the boxes for me. It's cheap, quick and easy. It doesn't require too many ingredients. I would definitely make this recipe again. I usually have all of these ingredients anyways so it's something I can make when I run out of food and don't feel like going to the grocery store. Which happens to me all the time. Or I'll wait till last minute and then it's storming outside. And that's normal for a summer afternoon here in Florida. This actually happened to me a couple days ago but I didn't have a can of coconut milk or I could have made this recipe. Instead, I made some super random soup concoction that didn't turn out well. Lesson learned...or maybe not.
